Grammie's Pancakes
 
1 Egg   ½ cup cornmeal
1 cup Buttermilk (or yogurt)   ½ cup whole-wheat flour (I used pastry. I have also used rice, oat, etc.)
2 Tbsp honey or Maple Syrup   ¼ tsp baking soda
4 Tbsp veg oil   1 tsp baking powder
    ¼ tsp salt
 

Mix ingredients in each column separately. Combine just before cooking - do not over mix. Thin with milk if batter is too thick. Can sprinkle uncooked side with blueberries, raspberries, nuts, etc. before flipping.
