| 1 Egg | ½ cup cornmeal | |
| 1 cup Buttermilk (or yogurt) | ½ cup whole-wheat flour (I used pastry. I have also used rice, oat, etc.) | |
| 2 Tbsp honey or Maple Syrup | ¼ tsp baking soda | |
| 4 Tbsp veg oil | 1 tsp baking powder | |
| ¼ tsp salt | ||
Mix ingredients in each column separately. Combine just before cooking - do not over mix. Thin with milk if batter is too thick. Can sprinkle uncooked side with blueberries, raspberries, nuts, etc. before flipping. |
