LOW FAT 'KEEP YOU GOING' BRAN MUFFINS
 
Preheat oven to 400 degrees
 
1 Cup flour   2 Cups 100% Bran cereal
1½ tsp. Baking powder   1¼ Cups Skim Milk
½ tsp. Baking soda   1/3 cup firmly packed brown sugar
½ tsp. Cinnamon   1 egg
    ½ cup applesauce
    Optional ½ cup walnuts
    Optional ½ cup blueberries/cranberries or raisins
 

Mix flour, baking powder, soda and cinnamon in a large bowl. Mix cereal, milk and brown sugar in another bowl and let sit 5 minutes. Stir in applesauce. Add to flour mixture until moistened. (Batter will be lumpy.) Stir in nuts, etc, if using. Spoon batter into muffin pan sprayed with non-stick cooking spray.

Bake 20 minutes.
