| LOW FAT 'KEEP YOU GOING' BRAN MUFFINS | ||
| Preheat oven to 400 degrees | ||
| 1 Cup flour | 2 Cups 100% Bran cereal | |
| 1½ tsp. Baking powder | 1¼ Cups Skim Milk | |
| ½ tsp. Baking soda | 1/3 cup firmly packed brown sugar | |
| ½ tsp. Cinnamon | 1 egg | |
| ½ cup applesauce | ||
| Optional ½ cup walnuts | ||
| Optional ½ cup blueberries/cranberries or raisins | ||
Mix flour, baking powder, soda and cinnamon in a large bowl. Mix cereal, milk and brown sugar in another bowl and let sit 5 minutes. Stir in applesauce. Add to flour mixture until moistened. (Batter will be lumpy.) Stir in nuts, etc, if using. Spoon batter into muffin pan sprayed with non-stick cooking spray. Bake 20 minutes. |
