PEGGY'S COMPANY POTATOES
 

Grease a large casserole or deep aluminium disposable pan. (I mixed everything in the pan.)

Par boil 5lbs potatoes, cool, peel, then shred.
Add 2-3 Cups sour cream, 2-3 cups grated cheddar cheese, salt and pepper to taste.

Chopped chives (I added at least 2 TBSP to each casserole) Chopped onions sprinkled on top.

Bake at 350 degrees, uncovered, for 1 hour or until brown and bubbly and done.
